My Latest Bread Recipe

I have been making this bread for about 8 years now.  I have added and subtracted ingredients, tweaked it a bit.  It's hard to know exactly what the original recipe was anymore.  This was the way I made it yesterday and today.

5 cups steaming hot water
2/3 cup of oil
2/3 cup honey or 1 cup sugar (I always use sugar because it's cheap and easier)
3 Tbsps instant yeast
2 Tbsps salt
3 Tbsps dough enhancer or soy protein powder
1/2 cup wheat gluten
12 cups whole wheat flour


Preheat oven to 150 degrees.  Put water in mixer.  Add all ingredients except flour.  Stir.  Slowly add in flour one cup at a time while stirring.  Dough is ready when it no longer sticks to side of bowl.  Knead dough in mixer for 10 minutes.

While dough is kneading, generously grease four bread loaf pans with shortening.  Spray non-stick cooking spray on counter top.  Using extra shortening to grease your hands (dough is very sticky).  Remove dough from bowl and place on greased counter top.  Divide into four equal parts.  Shape dough into smooth loaf shapes and place in pans.  Press down on dough until it fills the entire bottom of the loaf pans (no empty corners).  This makes the bread rise more evenly.  Place pans side by side in warm oven.  Leave oven on.  Let rise for 30-35 minutes.  (I typically like to see that the dough is at least at the top of the pan.  If not, I let it rise 5 minutes longer.)  Leave pans in oven!  Turn oven up to 350 degrees and let bake for 30-35 minutes.  Remove pans from oven and turn out loaves.  Wait until bread has cooled significantly before slicing.

  1. So I am laughing because I don't have a mixer or bread machine. But am I missing the flour amount. I only see 1/2 cup

  2. 12 cups whole wheat flour! Right at the bottom there. You can make it in a bowl. I made this for years before I got a mixer!

    1. My recollection was that we got it from somebody on the old Lds parents board. But you tried it several times before I did. I was burnt out from never being able to make whole wheat bread that tasted like Great Harvest. But you convinced me to give it a try. (You were right about the bread, too.)

  4. I'm about to enter into sugar territory too. Honey has gone way up in price, now $43 for a gallon of raw.

    Now that I'm adding gluten, kneading for 10 mins and not 7, baking for 30 mins and not 40!, the bread is doing better. softer, lighter. I've been over cooking for years, like a fool.
